INSTRUCTIONS FOR USE
FIRST TIME USE: Remove all the packaging, stickers, labels and tags on your
CRISTEL® product, wash it in very hot water with chlorine free dishwashing
soap, rinse thoroughly, and dry it.
Cooking: The CRISTEL thermodiffuser base comprises of 3 to 5 separate layers
of material, thereby guaranteeing optimal heat distribution. Once the desired
temperature has been reached, REDUCE the heat source to avoid overheating
your ingredients and your cooking vessel. If you are cooking with GAS, watch that
the flame never extends beyond the thermodiffuser base. With all other cooking
surfaces, be sure the cooking vessel is correctly centered on the heating zone.
Always choose a smaller cooking zone than the flat part of the thermodiffuser
base of your cooking vessel.
To cook meats without using any oil or fat: Preheat your CRISTEL product. The ideal
cooking temperature is reached when a drop of water dripped into the pan bubbles.
Reduce the heat by a third. Place the meat flat in the pan; it will stick initially but can be
easily lifted from the pan once you see moisture appearing on the surface of the meat.
Turn the meat over and do the same thing on the other side. To cook, put your stovetop
on the medium setting and cook uncovered for a few minutes. Then when it naturally
releases turn it over and follow the same procedure. Any fond left in the bottom of the
pan can be used to make Au jus with a little water. Cuts of beef, veal, pork, lamb and
chicken portions can all be cooked in the way described. When you have completed
cooking you can clean your pan easily by adding a little hot water to loosen the fond. It
can then be cleaned easily with soap and water.
Braising or poaching can be accomplished by cooking on the low setting with a
half inch of water in the pan with the vegetables, fish, poultry or meat you are
cooking. Cooking this way keeps all of the nutritional value of the foods you cook
intact.
Boiling: Adding salt to cold water in an all stainless steel cookware could
damage the bottom of your cooking vessel.
Oven cooking: All CRISTEL cookware without a non-stick coating can be used in
the oven up to 450 degrees Fahrenheit (230° degrees celsius). To avoid thermal
shock for glass lids always put the lids into an oven at room temperature. Never
add cold water on a glass lid. Handles should always be removed for oven
cooking to avoid burns.
COOKING SURFACES - NEVER HEAT A PAN WITH NONSTICK COATING OVER
520°F, NEVER HEAT A PAN WITHOUT NONSTICK COATING OVER 600°F,
AS THIS COULD DAMAGE IT.
OVEN OVEN – DO NOT COOK WITH HEAT GREATER THAN 450° F (230° C).
GLASS LIDS AND PRODUCTS WITH NON STICK COATING SHOULD NOT BE
PLACED UNDER THE BROILER.
DO NOT ADD SALT IN YOUR CRISTEL POT UNTIL THE WATER IS BOILING.
AVOID ANY TYPE OF THERMAL SHOCK ON GLASS LIDS
(FROM FRIDGE TO OVEN FOR INSTANCE).
NEVER PUT THE REMOVABLE HANDLES IN THE OVEN.
NEVER USE CRISTEL PRODUCTS FOR A FUNCTION DIFFERENT FROM THAT FOR
WHICH IT WAS CONCEIVED.
NEVER USE CRISTEL PRODUCTS IN MICROWAVE.
