• BREAD BAKING • One ¼-ounce packet of yeast equals 2¼ teaspoons yeast. • Using milk in place of water will produce a softer crust. • After baking, you can soften the crust, if desired, by rubbing it with unsalted butter soon after removing it from the oven. This prevents crust from drying out quickly. • If a recipe calls for a specific type of flour, use the flour recommended. If you do not have bread flour, you can substitute unbleached, all-purpose flour, but your bread may not rise quite as much.
CAKE BAKING • Have all ingredients and mixing bowls at room temperature. Room temperature ingredients incorporate and blend more easily. • Fill pans immediately after mixing. • Bake immediately after filling pans. • Check for doneness at the beginning of the time range given. • Cool cakes in pans until cool to touch, then remove from pans to completely cool on a wire rack after baking. • An offset spatula will make spreading frosting easier than a knife or regular spatula.
• • STABILIZED WHIPPED CREAM Stabilized whipped cream will hold longer in the refrigerator before using, and it can also be used for decorating, using a pastry bag and tip. Using gelatin or a purchased stabilizer will prevent whipped cream from weeping. To make stabilized whipped cream, soften powdered gelatin by sprinkling it over water in a measuring cup. Let stand 5 minutes to soften. Then place the measuring cup in a pan of simmering water and stir over low heat until gelatin is dissolved.

GUÍA DE RECETAS PREPROGRAMADAS Función 3: “WHISKING” (batir) Programa “WHIPPING CREAM” (batir crema) Este programa está diseñado para batir hasta 2 tazas (475 ml) de crema líquida para batir (“heavy cream”), para conseguir aprox. 3½ tazas (830 ml) de crema batida. La crema batida producida tendrá picos medio-suaves. ENTREMESES SALADOS Y ALIÑOS Gruyère y los ingredientes restantes; mezclar a velocidad 2 para incorporarlos. Colocar la mezcla en una manga pastelera con una boquilla redonda pequeña a mediana. “COFFEE CAKES”, “MUFFINS” Y PANES SIN LEVADURA Para preparar el pastel de suero de leche: Colocar la harina, el bicarbonato, el crémor tártaro y la sal en el bol. Instalar el batidor de alambre y elegir la función “MIXING” y el programa “DRY INGREDIENT MIXING”. Una vez mezclado, reservar, en un tazón. El secreto detrás de este pan de banana suave es no procesar demasiado la mezcla. Aunque la batidora de pies es capaz de llevar a cabo los trabajos más difíciles, tales como mezclar las masas más pesadas, la velocidad 1 garantiza que los ingredientes se mezclen y se incorporen suavemente.
Pancitos de pacanas acaramelados Al final del programa, colocar la mezcla en un tazón mediano; reservar. Colocar la mantequilla y el azúcar en el bol. GALLETAS Y BARRAS Al final del ciclo de amasado, presionar la perilla de control para pausar el programa. Quitar el gancho amasador y cubrir el bol con una toalla húmeda o papel film/plástico. Dejar leudar la masa por 60 minutos, a temperatura ambiente de aprox. 70 °F (20 °C), hasta que doble de volumen. Nota: Las masas enriquecidas, es decir, las que llevan más grasa/mantequilla/leche/azúcar, tardan más en leudar que las masas tradicionales. Es probable que esta masa de pan necesite unos 30 minutos más.

Instalar el batidor de alambre. Batir, aumentando gradualmente la velocidad al nivel 5, hasta conseguir una mezcla suave y homogénea.

Precalentar el horno a 350 °F (175 °C). Engrasar una bandeja de 13 x 9 in. (33 x 23 cm) con spray vegetal y forrar con papel sulfurizado o papel de aluminio, dejando un borde extra de 1 in.
