ances,becausethefewairbubblesthatarise with rotation are smaller. So the creamremains
stableandfirm–withoutaddingcreamstiffener.Tousethecreamstraightawayjustadd1–2
tablespoonsofcoldmilkper200 ml.Thisraisesthevolume,butyouthenhavetousethecream
soonafter.
