Placeyourovenonaflatevensurface,awayfromanycombustiblematerials.Ideallyastoneor
concretefloorispreferred.Consultlocalbuildingandfireregulationsfortherecommended
safedistancefrombuildings,partitionsandcoveringssuchaspergolasandroofs.Additional
partsmayberequired.
Onceinposition,placewheelblocksagainstthewheelstoensuretheovendoesnotmove.
Checkforwinddirectiontoensurethewindisnotblowingdirectlyintoyouroven.Thiswill
blowtheasharoundtheinsideoftheovenandalsoreducetheinternaltemperature.
LIGHTINGYOUROVEN
Startwithnewspaperorothernon-treatedpaper,rolledintoballsandplaceddirectlyinthe
centeroftheovenfloor.
Addsmallpiecesofwellseasoned,drykindling(hardwood)andplaceontopofthepaper.
Usingalonghandledlighterignitethepaperinseverallocationsoneithersideoftheoven.
Oncethefireisburningwell,addslightlylargerpiecesofwoodtocontinuetobuildyourfire.
Afterseveralminutesofthefireburningwell,usingafirepokerorsimilaroventool,pushthe
firetothefarleftsideoftheoven.
TheFornoVenetzia“Paralegna”woodholder(purchasedseparately)canbeusedtokeepyour
fire,embersandashinacompactpileinsideyouroven.Thiswillmaximizethesizeofthe
cookingsurface.
Oncethefirehasbeenpushedallthewaytotheleftoftheoven,usinglongheavydutyoven
gloves,placetheParalegnainthecenteroftheoven.Thenusingyourfirepokerorcleaning
brush,pushtheParalegnaupagainstyourfireuntilthebottomoftheParalegnatouchesthe
leftsideoftheovenwall.Ifyoudonothaveawoodholder,simplypushthefireupagainstthe
leftsideoftheoven.
Usingawirecleaningbrushsweepanyremainingsootandashontheovenfloortowardthefire
andletyourfirecontinuetoburnaddingpiecesofwoodasneeded.
