INSTALLATION Continued Electrical Connections Before attempting the electrical connection, the rating plate should be checked to ensure that the unit’s electrical characteristics and the supply electrical characteristics agree. Installation of the wiring must be made in accordance with U.L. 197 Commercial Electric Cooking Appliance Standards, Local and/or National Electrical Code, ANSI/NFPA 70-1990, or the Canadian Electrical Code, CSA C22.2 as applicable. 1. OPERATING INSTRUCTIONS Master 200 Solid State Control with Electromechanical Timer Modes In Off Mode When the oven is off, there are no lights or indicators. Start Up Press the COOK/OFF/COOL DOWN rocker switch to the “COOK” position. The green lamp will light indicating the oven is powered in cook mode. The oven will begin to heat to the temperature set on the thermostat dial. The amber lamp will light indicating the heat is active.

OPERATING INSTRUCTIONS Continued Timer The timer is set by rotating the dial clockwise aligning the indicator to the desired time cycle. The timer will count down from 2 minutes to 60 minutes. At the end of the timing cycle the buzzer will sound. The buzzer is turned off by rotating the dial counter-clockwise to the off position. NOTE: The timer does not control heating.

OPERATING INSTRUCTIONS Continued Pressing the FAN HIGH key will activate the higher fan speed and light its LED. Pressing the FAN LOW key will activate the lower fan speed and light its LED. Pressing the FAN PULSE key will activate the lower fan speed and light its LED. The fan will be active for 30 seconds then off for 30 seconds, and continuous this cycle. Pressing the SETBACK key will cool the oven cavity to a preprogrammed temperature, see: Setting “Set-Back” Feature.

OPERATING INSTRUCTIONS Continued Operating the Controls Core Probe Operation Setting the cook temperature and time are done in the same manner. Pressing the SET key will light the TEMP LED. The operator then sets the temperature by rotating the dial on the controller until the desired temperature is shown on the display. Pressing the SET key a second time lights the TIME LED and allows the operator to select the desired cook time as shown on the display.

OPERATING INSTRUCTIONS Continued Master 475 Electronic Programmable Control Manual Cooking 1. Press SET key – TEMP LED will light. 2. Set temperature using the dial (factory preset at 350°F). 3. Press SET key – FAN LED will light. 4. Select fan mode using one of the three (3) fan keys (HIGH, LOW, PULSE) – the selected FAN LED will light. 5. Press SET key – TIME LED will light. 6. Set cook time using the dial (factory preset at 30:00). 7. Press SET key – ready to cook. 8.

OPERATING INSTRUCTIONS Continued 1. Press and hold PROG key for three (3) seconds – all the product key LEDS light. 2. Code will be displayed. The controller is asking for the access code. Press 4-2-7-5 and the START/CANCEL key. PROD will be displayed indicating you have gained access to Product Programming. 3. Press the product key (1-9) into which you want to store a cooking program. SHLF will be displayed. The control is asking if you want to program the key as a shelf timer or with a cooking profile.

OPERATING INSTRUCTIONS Continued Verifying Hold Time (Master 475) While a product is being held, press and hold the product key. The actual hold time will be displayed. EXAMPLE: Two product profiles contain the same cooking temperature, fan speed and are both programmed for flex time – keys 1 and 6. Press PROG and ACTUAL TEMP keys at the same time, F or C will be displayed. (Factory preset for F) Two trays of product are going to be cooked in the oven at the same time.

PERFORMANCE RECOMMENDATIONS AND GENERAL SAFETY PRECAUTIONS 1. Preheat oven thoroughly (approx. 20 minutes) before use. 2. As a general rule, temperature should be reduced 25° to 50° from that used in a standard/convection oven. Cooking time may also be shorter, so we suggest closely checking the first batch of each product prepared. 3. Use the chart of suggested times and temperatures as a guide.

COOK AND HOLD Please refer to the operating instructions to program the 450 and 455 control units for Cook and Hold feature. The times and temperatures listed below are to be used as a starting guide. Your actual results may vary greatly depending on your elevation, atmospheric conditions and other items being cooked at the same time. CLEANING AND MAINTENANCE Break-In Period 4. Clean with soap and water using a non-metallic scouring pad, if necessary. If dirt and grease have accumulated, a mild ammonia solution or commercial oven cleaner such as Easy-Off or Dow may be used. When oven is new, operate it for one hour at 375°F (191°C) before you begin your normal cooking operation. After cooling, wipe the interior, including the racks, with a clean damp cloth. 5. To reinstall, reverse procedure.

CLEANING AND MAINTENANCE Continued At the end of the day, press the ON/OFF key, for the 400 series controllers to activate the Auto Cool Down feature. The fan will run on high until the oven cavity drops below 150°F (66°C). When the oven temperature drops below 150°F (66°C) the oven turns off. This feature protects the oven motor from pre-mature failure. On the 200 series controllers, push the rocker switch to COOL position. Once cool set the rocker switch to OFF.

PROBLÈMES/SOLUTIONS Problèmes Solutions Réduire le nombre ou la taille des moules Si les pains mollets sont de couleur inégale Réduire la température ou placer un plat avec de l’eau dans le four Si les viandes ont une croûte dure Réduire le temps de cuisson. RECOMMANDATIONS D’UTILISATION ET PRÉCAUTIONS GÉNÉRALES DE SÉCURITÉ 1. Bien préchauffer le four (environ 20 minutes) avant son utilisation. 2. D’une façon générale, réduire la température de 25° à 50° par rapport à celle d’un four conventionnel/standard. Le temps de cuisson peut également être plus court et pour cette raison nous recommandons de surveiller attentivement la première cuisson de chaque type de produits. 3. Utiliser le tableau des temps et des températures de cuisson suggérés comme guide.

Lorsque le processus de cuisson/minuterie est terminé pour chaque niveau, un signal sonore de fin de cuisson se fait entendre et l’affichage indique quel est le niveau où la cuisson est terminée. Si l’on appuie sur la touche produit après le dernier profil programmé, l’appareil affichera la première température. • Appuyez sur la touche SET après la saisie des dernières températures de cuisson, le mot HOLD s’Affiche. 7. INSTRUCTIONS D’UTILISATION (suite) Cuisson Manuelle à l’aide de la Fonction Cook-N-Hold (Cuisson et Maintien au Chaud) 1. Appuyez sur la touche COOK/HOLD, la DEL de cette touche s’allume. 2. Appuyez sur la touche SET - la DEL TEMP s’allume. 3. Réglez la température de cuisson à l’aide du cadran (préréglé en usine sur 350°F). 4. Appuyez sur la touche SET - la DEL HOLD s’allume. 5. Réglez la température du maintien au chaud à l’aide du cadran (préréglé en usine sur 200°F). 6.

INSTRUCTIONS D’UTILISATION (suite) Lorsque la température intérieure de l’aliment est atteinte, le signal sonore retentit et le message « DONE » clignote sur l’affichage pendant 3 secondes. L’affichage passe automatiquement à « HOLD » . Pour terminer ce cycle, la sonde thermique doit être retirée du connecteur. Réglage de la fonction Setback (retour au point de consigne) Pour configurer ou modifier les réglages de retour au point de consigne, maintenir enfoncée la touche SETBACK pendant deux secondes.

INSTRUCTIONS D’UTILISATION (suite) Si on appuie sur la touche ON/OFF pour arrêter le four et si la température du four est supérieure à 200°F (93°C), le four entre en mode Auto Cool Down (refroidissement automatique). En mode de refroidissement automatique, le ventilateur fonctionne à haute vitesse jusqu’à ce que la température intérieure du four descende au-dessous de 150°F (66°C). Pendant ce temps, l’affichage indique « AUTO ». Lorsque la température du four est inférieure 150°F (66°C), le four s’arrête.

INSTRUCTIONS D’UTILISATION (suite) Si la porte est ouverte pendant le mode de cuisson, le ventilateur et le chauffage s’arrêtent et l’affichage indique « DOOR » jusqu’à ce que la porte soit fermée. Ceci est une fonction de sécurité . Quand on appuie sur la touche ACTUAL TEMP, la température réelle du four est indiquée sur l’affichage par incréments de 5 degrés. Touches du Contrôleur On appuie sur la touche ON/OFF, pour mettre en marche le four.

Température La plage de températures va de 150°F à 500°F (66°C à 250°C) et est commandée en tournant le cadran de température et en alignant l’indicateur sur la température souhaitée. Minuterie La minuterie est réglée en tournant le bouton dans le sens horaire pour aligner l’indicateur avec le cycle désiré de minuterie. La minuterie décompte de 2 minutes à 60 minutes.

INSTRUCTIONS D’UTILISATION Commande Transistorisée Master 200 avec Minuterie Électromécanique Modes En mode d’arrêt Quand le four est éteint, il n’y a aucun voyant ni indicateur. Démarrage Mettre le commutateur à bascule COOK/OFF/COOL DOWN en position « COOK ». Le témoin vert s’allume, indiquant que le four est sous tension et en mode de cuisson. Le four commence à chauffer pour atteindre la température réglée sur le cadran du thermostat. Le témoin ambre s’allume indiquant que le chauffage est actif.
