The Tekna 5010 NFN Gelato Holding and Storage freezer is designed for maximum efficiency. Holds (48) standard 5 Liter pans of gelato or (7) standard size sheet pans. Tekna storage freezers have been carefully designed to store the maximum amount of gelato or confectionery in the minimum amount of space. The frost-free freezers have automatic defrost settings and ventilated refrigeration for a uniform cabinet temperature. The freezers also feature electronic temperature controls from +5C to -25C. The shock freezers ensure proper creaminess, consistency, flavor and shelf life. Without quality blast freezers, gelato may separate; forming ice crystals, as well as the product texture and consistency will be dramatically reduced, creating a grainy inferior product.
