Beef Stroganoff
Ingredients:
1 Y2pounds Beef, cubed (top round)
1 cup Flour, all purpose
1 small Onion, yellow (diced)
3 tablespoons Olive Oil
1/2cup Pasta Sauce
1 can (14 ounces) Beef Broth
2 tablespoons Parsley, dried
1 cup Sour Cream
To taste Salt
To taste Pepper
Method of Preparation:
Coat beef cubes with flour and set aside.
In a 5 quart microwave safe casserole dish, mix the onions and oil together and
microwave for 5 minutes on high (100% power level), until onions are
translucent. Add beef and cook for 8 minutes on high (100% power level)
stirring once.
Stir in sauce, parsley and broth. Heatfor 1 hour and 5 minutes at 50% power
level, stirring occasionally.
Removefrom oven and stir in the sour cream. Add salt and pepper to taste.
Tortellini Salad
Ingredients:
6 cups Water
1 pound Cheese tortellini, fresh
5 cups Broccoli florets
3 tablespoons Olive Oil
1 tablespoon Red wine vinegar
1 teaspoon Italian Seasoning, dried
To taste Salt
To taste Pepper
Method of Preparation:
Place6 cups of water in a 3 quart microwave safe casserole dish and heat for 10
minutes on high (100% power level). Add tortellini and heat for an additional 3
minutes. Remove from oven, strain then cool with cold water. Place in
refrigerator until needed.
Put the broccoli in a microwave safe bowl, add 2 tablespoons of water, cover
and heat for 2 minutes and 30 seconds on high (100% power level). Remove
from oven and cool with cold water.
In a large bowl mix together the tortellini, broccoli, olive oil, red wine vinegar,
Italian seasonings, salt and pepper. Refrigerate for at least 3 hours.
Makes about 5 servings.
