Baking powder
Baking powder is used for rising ultra fast bread and cakes, as it does not need me to
rise and instead produces air. The air will form to soen the texture of the bread or
cakes.
Soda
Soda is similar to baking powder. It can also be used in combinaon with baking
powder.
Water and other liquid
Water is an essenal ingredient for making bread. Generally speaking the water
temperature should be between 20
°
C and 25
°
C for the best results. The water may be
replaced with fresh milk or water mixed with 2% milk powder, which will enhance the
breads avour and improve crust colour. Some recipes may call for juice, e.g. apple
juice, orange juice, lemon juice and so on for the purpose of enhancing avour.
