ROASTED
POTATOES WITH
SPICY MAYO
1 pound baby potatoes, cut in quarters
2 tablespoons extra virgin olive oil
3 teaspoons hot paprika, divided
1 tablespoon plus 1 teaspoon smoked paprika, divided
1 tablespoon plus 1 teaspoon garlic powder, divided
4 teaspoons kosher salt, divided
1/2 cup mayonnaise
2 tablespoons sundried tomato paste
2 tablespoons sherry or white wine vinegar
1/2 cup fresh parsley, nely chopped, for garnish

In a large mixing bowl, toss the potatoes in olive oil, 2 teaspoons hot
paprika, 1 tablespoon smoked paprika, 1 tablespoon garlic powder, and
2 teaspoons salt.
Preheat the unit by setting the temperature to 360°F
(170°C)
, and setting
the time to 3 minutes. After 3 minutes, place seasoned potatoes;

While potatoes are cooking, mix together mayonnaise, tomato paste,
vinegar, and remaining seasonings in a small bowl.
When cooking is complete, garnish potatoes with parsley and serve with
