DELIVERY OF THE APPLIANCE The oven you have purchased has been thoroughly tested for the purpose of guaranteeing the highest quality. When you receive the oven, check carefully that it has not been damaged during transport, by carefully verifying the intactness of the packing in which the oven was delivered.
UNPACKING THE DEVICE - Carefully remove the appliance from its packing Keep the cardboard box and all packing material until the appliance has been completely checked and tested. - Carefully read all information contained in this manual prior to installing and using the appliance.
- Do not place the appliance near flammable materials or containers of flammable materials (walls, furniture, screens, gas canisters) as this can create a fire hazard. - The oven is not suited for flush mounting, and its positioning has to comply with the minimum distances from the walls of the installation room (there is a label affixed to the appliance that specifies such distances:) non-combustible walls: 50 mm from the sides and back of the oven.
READING THE TECHNICAL DATA PLATE - example Before you proceed with the subsequent installation operations, carefully read the technical data label affixed on the right side of the oven (looking at it from the front).

Operations carried out incorrectly may cause damages and injuries (including serious ones) to people, animals and/or property. Read this instruction manual carefully and fully understand the information contained in it prior to carrying out the installation.
WATER CONNECTION – inlet water (for preset ovens) ATTENTION Using a type of water with unsuitable characteristics may cause considerable damage to the heating elements, to the fans and to the cooking chamber of the oven. It is recommended to use a type of water with suitable characteristics, as indicated in the paragraph below.
WATER CONNECTION – water discharge (for preset ovens) ATTENTION Depending on how the oven is used, the liquids flowing out of the water discharge may reach extremely high temperature values. The reference standard does not allow values exceeding 140°F (60°C). Therefore, in case the measured temperature value of the discharged fluids exceed such limit, a suitable cooling system will need to be installed, in compliance with the provisions of the Standard.

FIRST USE – TESTING PROCEDURE Prior to starting the oven for the first time, make sure there are no plastic bags, instruction manuals, informative material or plastic film inside the cooking chamber. Make sure the tray support structures positioned inside the cooking chamber are well secured to the chamber walls. The oven must be tested by carrying out a trial cooking session to check that the appliance is working properly and that there are no problems or malfunctions.
CONTROL PANELS – MECHANICAL FOR CONVECTION OVENS TIMER ADJUSTMENT When the manual option is selected, the oven always stays on until the operator turns it off. When a certain value is selected, the oven stays on for the set amount of time (maximum value 120 minutes).
CONTROL PANELS – DIGITAL FOR CONVECTION OVENS SWITCHING ON THE OVEN When the oven is powered on, the control panel will be in standby mode. To access the oven features, press . The upper display will show the actual temperature of the cooking chamber. From now on it is possible to proceed with the settings of a manual cooking or with a program.
TIMER To set the timer, press and then use buttons or . Press to confirm the set time. The time setting range goes from “---” (infinite) to 999 minutes. By choosing an infinite cooking time, the oven will keep on working with the set parameters until the cooking is stopped in manual mode by pressing .
PROGRAMMED COOKING The oven can store up to 99 recipes, each one of which can be programmed with 3 phases (1,2,3). A cooking phase with infinite time cannot be followed by another phase. To create a new cooking program, with the oven ON, press flashing "P01". Use button or : the lower display will show a to choose the desired program. The caption “P01” will flash in case the program is free, otherwise it will light up steady. Press to confirm the desired program and to start creating it.

THERMOSTAT LIGHT This light is on when the oven heating elements are working and therefore the internal temperature of the cooking chamber is lower than the value set by means of the thermostat knob.

START/STOP Press the button to start/stop a program previously set or the cooking program underway. ENCODER The encoder knob turns both clockwise and counter clockwise to allow you to increase or decrease the value shown on the displayRemember to press the encoder to confirm the selected value, otherwise the system will not acknowledge the command. CORE PROBE To set a cooking using the core probe, insert the probe in the lower part of the control panel, removing the protective cap first.
STEAM/MOISTURE ADJUSTMENT Press the key and set the desired steam percentage by means of the encoder knob. Press the encoder knob to confirm the set value. You can set a value included between 0 and 10. At the end of the settings for the third phase, press button to move on to the setting of phase 4. You can enter all information regarding the fourth cooking phase (temperature, timer, steam, etc.). During the entering of data pertaining to phase 4, the LED light will be on next to all the phases, (CC1, C2, C3). At the end of the setting, press for 5 seconds the key : the caption “MEM” will be displayed, indicating that the program has been saved correctly.
SPEED ADJUSTMENT The oven fan/motor has two speed levels: Max: it means that the motor is at its maximum speed. Used for most cooking methods. Min: it means that the motor is at its minimum speed; it is mainly used for delicate foods, such as, for example, pastry. To adjust the fan speed, press the button will appear on the display.
Daily cleaning of the oven cooking chamber lining must be carried out with a non-abrasive detergent to guarantee its proper functioning. Use plastic bristles or a sponge soaked in vinegar and warm water in the case of dried residue. Attention: any fats and food residues in the cooking chamber could catch fire when using the oven, therefore, it is advisable to remove them promptly. Use only the recommended products to clean the stainless steel surfaces.
REPLACING THE LIGHT BULB - CONVECTION OVENS ATTENTION: Strictly adhere to the following procedure in order to avoid electrocution or damage to people: • Disconnect the oven from the electrical supply and let it cool down. • Remove the side supports that hold the baking trays. • Unscrew the glass cover “A”, being careful not to damage the gasket “C”. • Replace the lamp “B” with one having the same characteristics. • Screw the glass cover “A” back on, being careful not to damage the gasket “C”.
FAULT No water is input into the steam pipes. Water leaks out from the washer when the door is closed. The fan stops during operation CAUSE Water inlet closed Incorrect connection to the mains water supply Water inlet filters obstructed by dirt.

LIVRAISON DE L’APPAREIL Le four que vous avez acheté a été testé soigneusement, afin d’en garantir la qualité maximum. À la réception, vérifier attentivement que l’appareil n’ait pas subi de dommages dus au transport, en contrôlant soigneusement l’intégrité de l’emballage avec lequel il a été livré.
ENLÈVEMENT DE L’EMBALLAGE - Enlever avec précaution l’appareil de son emballage. Conserver à part le carton et tout le matériau d’emballage tant que l’appareil n’a pas été vérifié et testé complètement. - Lire attentivement toutes les informations contenues dans ce manuel avant d’installer et d’utiliser l’appareil.
- Ne positionner le four sous aucun prétexte près de matériaux ou récipients en matériau inflammable (parois, meubles, murs mitoyens, bouteilles de gaz), risque d’incendie. - Le four n’est pas approprié à l’encastrement et son positionnement doit respecter les distances minimales des murs du local d’installation (sur l’appareil est visible une étiquette reportant ces distances) : parois non combustibles : 50 mm des côtés et panneau arrière du four.
LECTURE DE LA PLAQUE DES DONNÉES TECHNIQUES – exemple Avant de procéder aux opérations d’installation successives, lire attentivement l’étiquette des données techniques, placée sur le côté droit du four (vue frontale).
BRANCHEMENT ÉLECTRIQUE – VALIDE POUR LES FOURS LIDO/GIUDECCA ATTENTION Tout type de branchement électrique doit être effectué par un personnel qualifié et autorisé, conformément aux réglementations en vigueur. Les opérations effectuées de manière erronée peuvent provoquer des dommages (même graves) aux personnes, animaux et/ou choses. Lire attentivement le manuel d’utilisation suivant et comprendre totalement les informations qui y sont contenues avant d’effectuer les opérations d’installation.
RACCORDEMENT AU RÉSEAU HYDRIQUE – eau en entrée (pour les fours prévus) ATTENTION L’utilisation d’un type d’eau ayant des caractéristiques impropres peut provoquer des dommages significatifs aux éléments chauffants, aux ventilateurs et à la chambre de cuisson du four. Il est conseillé d’utiliser un type d’eau ayant les caractéristiques appropriées, reportées au paragraphe suivant.
RACCORDEMENT AU RÉSEAU HYDRIQUE – évacuation de l’eau (pour les fours prévus) ATTENTION En fonction du type d’utilisation du four, les liquides en sortie de l’évacuation d’eau peuvent atteindre des valeurs de température très élevées. La norme de référence n’admet pas de valeurs supérieures à 140 °F (60 °C).

PREMIÈRE UTILISATION – PROCÉDURE D’ESSAI Avant d’effectuer la mise en fonction du four, contrôler qu’il n’y ait pas de sachets en plastique, de notices d’instructions, de matériel d’information, de pellicules en plastique à l’intérieur de la chambre de cuisson. S'assurer que les structures porte-plats placées à l'intérieur de la chambre de cuisson soient bien bloquées aux parois de la chambre.
PANNEAUX DE COMMANDE – MÉCANIQUE POUR FOURS À CONVECTION RÉGLAGE MINUTERIE Lorsque l’option manuelle a été sélectionnée, le four reste toujours allumé, pendant un temps indéterminé, jusqu’à l’intervention de l’opérateur. Lorsqu’une certaine valeur est sélectionnée, le four reste allumé pendant le temps configuré (valeur maximum 120 minutes).
PANNEAUX DE COMMANDE – NUMÉRIQUE POUR FOURS À CONVECTION ALLUMAGE DU FOUR Lorsque la tension est donnée au four le panneau de commande se trouve en mode stand-by (veille). Pour accéder aux fonctions du four, appuyer sur . L’écran supérieur affichera la température réelle de la chambre de cuisson. Il est alors possible de procéder aux configurations d’une cuisson manuelle ou avec programme.
TEMPS Pour configurer le temps appuyer sur et ensuite agir sur les boutons ou . Pour confirmer le temps configuré appuyer sur . L’intervalle de configuration du temps varie de « -- » (infini) à 999 minutes. En choisissant une cuisson avec un temps infini, le four continuera à fonctionner avec les paramètres configurés tant que la cuisson en mode manuel ne sera pas bloquée, en appuyant sur .
CUISSON AVEC PROGRAMME Le four a la possibilité de contenir jusqu’à 99 recettes, chacune desquelles peut être programmée avec 3 phases (1, 2, 3). Une phase de cuisson avec temps infini ne peut pas être suivie d’une autre phase. Pour créer un nouveau programme de cuisson, avec le four sur ON, appuyer sur inférieur s’affichera l’inscription « P01 » clignotante. : sur l’écran Agir sur les boutons ou pour choisir le programme souhaité.

START/STOP Appuyer sur le bouton pour démarrer/arrêter un programme précédemment configuré ou le programme de cuisson démarré. ENCODER (CODEUR) Le bouton encoder (codeur) tourne dans le sens horaire et antihoraire, pour permettre d’augmenter ou de réduire le chiffre indiqué à l’écran. Se rappeler d’appuyer sur le codeur pour confirmer la valeur choisie sinon la commande n’est pas reçue.
RÉGLAGE VAPEUR/HUMIDITÉ Appuyer sur la touche et configurer le pourcentage de vapeur souhaité, en agissant sur le bouton encoder (codeur). Pour confirmer la valeur configurée, appuyer sur le bouton encoder (codeur).
Au terme des configurations de la troisième phase, en appuyant sur le bouton on passera à la configuration de la phase 4. Il est possible de saisir toutes les informations concernant la quatrième phase de cuisson (température, temps, vapeur, etc.). Lors de la saisie des données de référence de la phase 4 le voyant LED sera allumé en correspondance de toutes les phases, (C1, C2, C3).
RÉGLAGE VITESSE Le four prévoit deux différentes vitesses du ventilateur/moteur : Max : signifie que le moteur est à la vitesse maximum et elle est utilisée dans la plupart des cuissons. Min : signifie que le moteur est à la vitesse minimum et elle est utilisée surtout pour les plats délicats, par exemple ceux de pâtisserie Pour régler la vitesse du ventilateur, appuyer sur le bouton ou « Max » qui sera visible à l’écran.
Il est absolument interdit de laver la chambre de cuisson à des températures supérieures à 158 °F (70 °C), risque de brûlures. Le nettoyage quotidien de la garniture de la chambre cuisson du four doit être effectué avec un détergent non abrasif de façon à garantir son intégrité et sa parfaite efficacité. En cas d’incrustations de saleté, utiliser seulement des spatules en plastique ou une éponge imbibée de vinaigre et d’eau tiède.
REMPLACEMENT DE LA LAMPE D'ÉCLAIRAGE – FOURS À CONVECTION ATTENTION : Pour éviter des décharges électriques ou des dommages à la personne, se conformer scrupuleusement à la procédure suivante : • Désactiver le branchement électrique du four et le laisser refroidir. • Enlever les grilles latérales qui soutiennent les plats. • dévisser le couvercle en verre « A » en faisant attention au joint « C ». • Remplacer la lampe « B » par une autre lampe ayant les mêmes caractéristiques.
