BLUEBERRY MUFFINS
3 tablespoons butter, softened
6 tablespoons sugar
1 egg
3 tablespoons milk
2/3 cup all-purpose our
1/2 teaspoon baking powder
Dash salt
1/2 teaspoon cinnamon, optional
1/3 cup small blueberries
Beat together butter and sugar until creamy.
Beat in egg. Stir in milk. Combine dry
ingredients. Add dry ingredients and blend
just until combined. Stir in blueberries.
Fill each cup with about 2 tablespoons
batter. Bake in cupcake maker about 7 to 8
minutes or until toothpick inserted in center
comes out clean.
