HARDWARE AND TOOLS NEEDED Assembly: Requires 2 people. Get another person to help. Tools Needed: Pliers, Phillips Head Screwdriver and a 7/16” Nut Driver. NOTE: Do Not tighten any bolts unless instructed to do so. Tightening too soon may prohibit parts from fitting together. All Hex Nuts should be on the inside of the grill unless stated otherwise. Step 1 To lift GRILL BODY and HOOD out of BODY SUPPORT BRACKET, first attach SIDE SHELF BRACKETS on the outside of the GRILL BODY using four (4) 1/4” FLAT WASHERS, four (4) 1/4” LOCK WASHERS, and four (4) 1/4-20 AKORN NUTS per bracket. Brackets should be mounted so that the slot opening faces upward. Side Shelf Bracket 1/4” Flat Washer Akorn Nut 6020_OM_A.
Step 2 Attach LEGS (3) to BODY SUPPORT BRACKET with two (2) 5/16” FLAT WASHERS, two (2) 5/16” LOCK WASHERS, and two (2) 5/16” MACHINE SCREWS into each leg bracket. Do not tighten bolts until after Step #7. Cart Leg 5/16” Flat Washer 5/16” Lock Washer Body Support Bracket 5/16” Machine Screw 6020_OM_A.
Step 3 Attach BOTTOM SHELF to LEGS using one (1) 5/16” FLAT WASHER, one (1) 5/16” LOCK WASHER, and one (1) 5/16” MACHINE SCREW per LEG. 5/16” Machine Screw Bottom Shelf 5/16” Flat Washer 5/16” Lock Washer 6020_OM_A.
Step 4 Screw CASTERS (3) onto each LEG, lock CASTERS before tightening. Caster 6020_OM_A.
Step 5 With assistance, place GRILL BODY and HOOD ASSEMBLY onto BODY SUPPORT BRACKET ASSEMBLY. Hood Grill Body 6020_OM_A.
Step 6 Attach FRONT HANDLE to the HOOD with two (2) 1/4” FLAT WASHERS, two (2) 1/4” LOCK WASHERS, and two (2) 1/4-20 AKORN NUTS. 1/4” Lock Washer Handle 1/4” Flat Washer Akorn Nut 6020_OM_A.
Step 7 Attach SIDE SHELVES onto SIDE SHELF BRACKETS. Side Shelf Step 8 Loosley attach four (4) BRACKETS to SMOKESTACK using four (4) 5/16” LOCK WASHERS, and four (4) 5/16-20 x 1/2” COMBO HEAD SCREWS. Smokestack 5/16” Lock Washer 5/16” Screw Bracket 6020_OM_A.
Step 9 Mount SMOKESTACK to top of GRILL HOOD, see figure A. Then adjust BRACKETS to the outside to hold the SMOKESTACK in place, see figure B. Tighten BRACKET SCREWS. figure A figure B 6020_OM_A.
Step 10 Place FIRE BOWL on inside of the GRILL BODY, mating the two (2) knotches at the bottom of the FIRE BOWL, see figure A, with the corresponding bumps on the bottom of the GRILL BODY, see figure B. Fire Bowl figure A 6020_OM_A.
Step 11 Place CHARCOAL GRATE, COOKING GRATE, and WARMING RACK on inside of the GRILL BODY. Insert ASH DRAWER into lower body opening. Grate Lifter Warming Rack Cooking Grate Charcoal Grate Ash Drawer 6020_OM_A.
Step 12 Attach six (6) UTENSIL HOOKS to the underside of the SIDE SHELVES. Tighten all bolts. Utensil Hook 6020_OM_A.
Fully Assembled Hint: The paper label that is affixed to the hood is more easily removed when the hood is warm. Any remaining glue residue can be cleaned off with a spray lubricant like WD-40 . Do NOT use any other type of solvent or cleaner because this will damage the finish/paint/coating on the grill. 6020_OM_A.

OPERATING INSTRUCTIONS Setting Up Set grill up on solid, flat surface with adequate wind shelter. Do not move grill while hot, and do not leave unattended during operation. This appliance is designed for use outdoors, away from any flammable materials. It is important that there are no overhead obstructions and that there is a minimum distance of 12 feet (366 cm) from the side or rear of the appliance. It is important that the ventilation openings of the appliance are not obstructed.
ALWAYS FOLLOW CHARCOAL AND LIGHTER FLUID MANUFACTURERS’ INSTRUCTIONS AND WARNINGS. USE OUTDOORS ONLY ON NONCOMBUSTIBLE SURFACE – 15’ AWAY FROM WOOD AND COMBUSTIBLE MATERIAL. Grill Operation & Tips • Control heat with amount and type of fuel, and Dual dampers. Wood burns hotter than coals and more airflow equals more heat. • Add water soaked hardwood chips for a smoked flavor. Do not use self-starting charcoal as it will give unnatural flavor. Burn lighter fluid completely before closing lid.
For Smoking: 1. Follow instructions for lower temperature cooking (350˚F and below). 2. Pre-soak wood chips for 35 minutes. Soak chunks for 1 hour and 30 minutes, or until wood is completely saturated. 3. After grill has reached desired temperature, sprinkle two handfuls of soaked wood chips or chunks over the lit charcoals. 4. Let the chips begin to smoke by closing the lid. 5. You can begin cooking after a few minutes.
Smokin’ Stone, Drip Pan, Grate & Meat Rack This is another method of INDIRECT cooking. Also ideal for ROASTING large cuts of meat and ribs, this method catches the meat’s drippings below the grate. TIPS FOR AKORN GRILLING (Direct Heat Above Coals) • Leave grill Lid down while cooking to eliminate flare ups & to provide even cooking • Add wood chips for flavor. When smoking, soak chips in water for 40 mins. prior to placing in the grill • Meat Thermometers give internal temperatures for rare, medium or well done. WHen testing temperatures, insert the probe into thickest part of meat.
Dry Rub Seasoning: Steak Marinade: • • • • • In a glass pan mix: • ½ cup olive oil • 1/3 cup soy sauce • ¼ cup wine vinegar • 2 tsp lemon juice • 1 tsp dry mustard • 1 minced garlic clove • small minced onion • ¼ tsp pepper Place the meat in the marinade and refrigerate for 3 hours. Mix 1/8 cup kosher salt ¼ tsp white pepper 1/8 tsp cayenne pepper 1 tsp black pepper Apply to both sides. BURGERS: Grill ½ lb Burgers exactly the same as Steaks EXCEPT... grill for 2 minutes before each flip.
• Sear lamb quickly over hot fire at 500° F for 3 mins per side then drop heat and/or move the rack to a cooler part of the grill to let center roast. This creates a perfect caramelized crust and keeps the center tender and juicy. • Close lid and let sit for another 5 minutes. • Test internal temperature as you go. Do not overcook. Lamb is rare at 120° F; medium 150° F • Remove from grill and tent under foil for 10 mins before carving (this is called, “Resting”).
QUAIL OR DOVES: • • • • • Cover birds in Italian dressing and marinate overnight. Pour remaining dressing and cover with Texas Pete® Hot Sauce for 6 hours. Wrap birds in thick bacon secured by a toothpick. Place on grill. Keep turning until bacon is black. Grill for 20 minutes. Sear with lid open at HIGH temperature (500-700° F) for 1 minute on each side before closing lid and lowering temperature.
TIPS FOR AKORN SMOKING (Indirect Heat) • • • • • • • • • • • • • • • • • • Smoke long and slow in the 200° to 350° F range Adjust the dampers for desired temperature. Remember, more air equals higher temperature. Lump charcoal is preferred over briquettes. Put several layers of charcoal in firebox with soaked hickory chips (soak 40 min to 3 hrs) mixed in or on top of coals for a wood smoke flavor to the meat. Use less lump charcoal than you would briquettes.
RACK OF BABY BACK RIBS: • • • • • • • • • Remove membrane by placing the tip of a meat thermometer between the membrane and a bone near the end of the rack of ribs. Work membrane loose and peel it off. Wash the ribs under cool water. Apply dry rub to all sides and let stand at room temperature for 30 minutes. Smoke for 1½ hr at 325° F. Remove meat from grill and brush all sides with honey BBQ sauce. Put meat into a rib rack in a foil pan with 1” apple juice.
Cooking Directions: • • • • • • Over a drip pan with no water, place roast in to roasting rack Cook roast 15 minutes per pound at 500 to 525°F for medium rare Put meat thermometer in roast last 30 mins cooking: 145°rare; 160°med; 175°well done When cooking is done, remove roast and allow it to sit uncovered for 10 minutes Break shell of salt away from roast & remove. Salt will be brittle and may have to scraped from meat surface. Let roast sit another 5 mins, slice and serve.
• • • Place in center of cooking grid directly above foil drip pan of water. Smoke for 12 minutes per pound. Allow several extra minutes per pound if stuffed to allow for expansion. Use a meat thermometer for best results (190F internal). SMOKED BAKED HAM: You can smoke fully cooked canned ham or smoked and cured whole ham or shank or butt portion. Glaze • 1 cup of light brown sugar, firmly packed • 1/2 cup orange juice • 1/2 cup honey • • • • • • • • Combine sugar, juice and honey.
Bacon Marinade • • • 2 oz. wine vinegar 2 oz. Worcestershire 4 dashes Tabasco • Place leg of venison in a container or “hefty bag” and marinate for 2-4 days, turning daily. Marinate bacon overnight in its marinade. Remove roast from refrigerator at least an hour before cooking. Season generously with seasoned salt and coarse ground black pepper. Wrap 1 lb. Bacon over the top of the roast, and smoke 20/25 minutes per pound, or until tender. Do not overcook.
