Italian Chicken
Ingredients:
2 large chicken breasts (cut into large cubes)
2 medium zucchini (cut into 1 ½” circles then split in half)
12 cherry tomatoes
Marinade:
¼ cup olive oil
¼ cup lemon juice (can substitute red wine vinegar)
½ teaspoon Tony’s rosemary garlic seasoning
½ teaspoon minced garlic
½ tablespoon Italian seasoning
fresh ground pepper
crushed red pepper (optional)
Directions:
• Preheatovento375°F.
• Applynon-stickbakingspraytothewirerackoftheGrease-
AwayKabobberPan.Soak4bambooskewersincoldwaterfor30
minutes.
• Inamediumbowl,mixallmarinadeingredientsandaddmeat.
Placeplasticwrapoverthebowlandrefrigeratefor30minutes,
stirringatleastonce.
• Addmarinadedmeatandvegetablestotheskewer,alternating
ingredients.Laythekabobsonthepanrackandplaceinthe
middlerackoftheoven.
• Cookfor20minutes.Removefromovenandletstandfor5
minutes.Sprinkleredpepperflakesovereachkabobforthatextra
kick!
