Greek Isle Lamb
Ingredients:
2 pounds lamb shank steak (deboned and cut into 1”
cubes)
Marinade:
¼ cup olive oil
2 tablespoons lemon juice
2 teaspoons oregano
1 tablespoon rosemary
½ tablespoon garlic powder
½ tablespoon onion powder
Directions:
• Preheatovento375°F.
• Applynon-stickbakingspraytothewirerackofthe
Grease-AwayKabobberPan.Soak4bambooskewersin
coldwaterfor30minutes.
• Inamediumbowl,mixallmarinadeingredientsandadd
meat.Placeplasticwrapoverthebowlandrefrigeratefor
30minutes,stirringatleastonce.
• Addmarinadedmeattotheskewer.Laythekabobson
thepanrackandplaceinthemiddlerackoftheoven.
• Cookfor12-15minutesuntildone.Removefromoven
andletstandfor5minutes.Servewithtzatzikisauce.
Tzatziki Sauce
Ingredients:
1 cup plain greek yogurt (cold)
½englishcucumber(peeled,dicedandsqueezed)
2 cloves garlic (crushed and minced fine)
¼ cup fresh dill (minced)
1tablespoonlemonjuice(freshsqueezedisalwaysbest)
salt and pepper to taste
Directions:
• Placeallingredientsinabowlandmixtogether.Add
saltandpeppertotaste.

Ingredients:
2poundsvealstewmeat(beef,chickenorporkcanbe
substituted)
Marinade:
½ cup Italian bread crumbs
½cupgratedRomanocheese
½ tablespoon onion powder
½ tablespoon garlic powder
1 tablespoon dried oregano
¼ cup olive oil
3tablespoonlemonjuice
1 tablespoon kosher salt and white or black pepper
Directions:
• Preheatovento375°F.
• Applynon-stickbakingspraytothewirerackofthe

incoldwaterfor30minutes.

on the pan rack and place in the middle rack of the
oven.
• Cookfor12-15minutesuntildone.Removefrom
ovenandletstandfor5minutes.Servewithroasted
