SHORT RIBS
Short ribs are small rectangles
of beef, usually taken from the
chuck cut. Short ribs consist of
layers of fat and meat and contain
small pieces of the rib bone. They
are usually very tough and are a
perfect dish to be cooked in a Cres
Cor oven, as the slow and humid
cooking environment maximizes
the natural enzymatic action to
tenderize the ribs.
