Chicken and Vegetable Panini

4 Panini rolls
400g cooked chicken
300g ready marinated and roasted vegetables
100g Mozzarella, grated
25g butter
Salt and freshly ground black pepper
n Preheat the grill plates on High.
n Open each Panini and butter. Divide the remaining ingredients evenly between each
Panini and layer, starting with the chicken, then vegetables and finally sprinkle with
the cheese.
n Season with salt and pepper and close each Panini.
n Place the sandwiches on the lower grill plate. Close the lid, pressing lightly for 30
seconds and bake for 3-4 minutes or until the bread is golden and crispy and the
cheese has melted.
n Serve hot.
