TOMATO SAUCE
Ingredients
500 gr. ripe Italian plum tomatoes
2 leeks
1 garlic clove
3 fresh basil leaves
30 gr. butter
olive oil
granulated sugar (or whole milk)
salt
Preparation
1.
Combine in a large saucepan: the sliced
leeks, the pressed garlic clove, the whole basil
leaves (clean), half of the butter and three
tablespoons of olive oil. Put the pan in the oven
and set it at maximum power for 3 minutes
.

Meanwhile, peel the tomatoes, de seed,
chop them and put them with the mixture. Add
a pinch of sugar and salt, stir, cover the pan and
place it in the oven for about 15 minutes,
stirring it two or three times. If the tomatoes are
too watery, leave them uncovered for half of the
requested time.
3. When done, remove basil from the sauce,
taste, add salt if necessary; melt in the
remaining butter.
NOTE: Salsa da usare a condimento di tutti
iGood over all kind of pasta, gnocchi, plain
rice, meats and vegetables. You can use
canned tomatoes instead of fresh ones, in this
case get rid of the liquid, which is always
abundant in canned products.

BOLOGNESE SAUCE
Ingredients
100 gr. sausage
100 gr. ground beef
30 gr. butter
3 tablespoons olive oil
1 small onion
tomato sauce
1 small celery stalk
1 garlic clove
1 bay leaf
1/4 glass of white dry wine
salt
pepper
Preparation
1. Slice very thinly onion and celery and put
them in a deep casserole, add half of the
butter, oil and the pressed garlic clove. Put
pan in the oven at maximum heat for 2
minutes.
2. Add the peeled sausage and the ground
beef, mash well with a fork, add the wine, put
pan back in the oven at maximum heat for 2-
3 minutes, stirring once.
3. Meanwhile, dilute a tablespoon of tomato
sauce with half a glass of boiling water, add
the liquid to the meat. Add little salt, bay leaf,
stir, cover the casserole, put it again in the
oven at maximum heat for 10 minutes, then
set the oven on medium heat for other 10
minutes stirring two or three times.
4. If after the first 10 minutes the sauce is
too liquid, uncover the pan for the remaining
time. At the end of given time add the
remaining butter, a pinch of pepper and salt,
if necessary (the sausage is already tasty). Let
pan stand in the oven switched off for 2
more minutes. The sauce is ready
