Sweet Potato Soup
Preparation time: 30 minutes
Ingredients for 4 portions:
1 tbsp pumpkin seed oil
1 large onion, peeled and Þ nely chopped
2 sweet potatoes, peeled and diced
4 cloves of garlic, peeled and Þ nely chopped
1 1/2 l chicken stock
1 tsp dried oregano
1 tbsp chilli powder
1 cinnamon stick
6 cloves
10 grains of allspice
Salt
2 fresh chilli pods, de-seeded and cut into strips (garnish)
30 g toasted sunß ower seeds, Þ nely chopped (garnish)
120 ml crème fraîche (garnish)
Preparation:
Brown the onions in a pan with some oil for approx. 10 to 15 minutes. Add sweet
potatoes and garlic cloves and fry for another 10 minutes, until these have also taken
on colour.
Put everything into the ceramic pot and pour in the chicken stock. Cook for 6 hours
on “LOW” with the lid on.
Grind oregano, chilli powder, cinnamon, cloves and allspice grains into a powder and
then add these to the soup. Cook for approx. 1 more hour.
Then, puree until smooth with the hand blender and season with salt to taste.
Serve garnished with the fresh chilli pods, crème fraîche and sunß ower seeds.
