Assembly
1. Attention! Oven is very heavy! Carefully set oven on cart making sure front of oven is faced in
the same direction as the front of the cart. This can be accomplished in two ways. Option 1: The
oven can be lifted by a hoist (motor hoists can be found at most rental stores) by attaching it to a
hook that can be found behind the chimney under the insulation. Option 2: Steel rebar can be
inserted through the channel iron that can be found at the base of the front and rear of the oven. In
essence, this becomes a handle on all four corners so that the oven can be lifted manually. Do not
attempt to lift the oven from the bottom because one risks damaging fingers. (It is advisable to
remove as much weight as possible from the inside of the oven. The cast doors can be easily
removed by removing hinge pins)
2. Once oven is placed on cart and the protective film is removed from the roof (the protective film
comes off more easily when it is warm – a hair dryer will help), use screw gun to secure roof with
supplied screws making sure the larger piece with the extra flap is on top so that water cannot
enter the oven. Using a block of wood and a rubber mallet, carefully tap the roof collar down until
it rests firmly on the roof panels.
3. Install the supplied black plastic apex covers on front and back of oven
4. Install the transformer on back of oven with supplied screws and plug into oven. (Found on top
right corner on back of oven)
5. If stone is packed separately, carefully remove interior side panels from inside of oven by lifting to
disengage, slide towards front of oven and lean top of panel towards center of oven. BE VERY
CAREFULL!! It is very important to remove the panel as described. They contain stones that can
be broken if dropped outside of oven.
6. Once panels are removed with stones, place the cooking stone on floor of oven and replace side
panels making sure they are secured.
Oven Specifics
Light Switch – the interior light is powered by 12 volts arriving via the transformer and can be turned on
and off as needed
Convection Switch – the convection fan is powered by 12 volts arriving via the transformer and can be
turned on and off as needed
Removable side panels – The interior side panels can be removed for easy cleanup. To remove panels, take
out all wire racks. Next, push one panel at a time in upward motion. Once disengaged, slide forward a few
inches and lean top portion of panel towards the center of the oven exposing the stones. Remove stones.
WARNING! It is very important to follow this step. If the stones fall out of the panel they will be
damaged.
To reinsert panel, follow reverse order, making sure panel is secure on setscrews.
Moving the oven – Use extreme caution when moving the oven. To move oven, slide handles out exposing
holes in the handle. Remove cotter pins near the rubber handle and insert in the holes nearest to the oven.
