Do not put the meat straight into the oven after taking it out of the fridge. • Before you start baking with low temperature you should sauté the meat in pan from all sides. The pores of the meat have to close and the outside should a crust. Sauté small pieces of meat.

Sauté small pieces of meat twice as long on the first side then on the other side but keep the cooking time. The optimum core temperature is between 65°C (rare) and 75°C (well done).

Place the lamb loins, garlic and olive oil in a plastic bag. Close the bag and marinate the lamb loins for 2 hours. Preheat the oven at 130°C using heat from above and below.
