ROAST~G Roastingis cookingby dry heat.Tendermeator poultrycan be roasteduncoveredin youroven. Roastingtemperatures,whichshouldbe low and steady,keep spatteringto a minimum. Roastingis reallya bakingprocedureused for meats.Therefore,the ovencontrolsare set for Baking or TimedBaking.(Youmay hear a slightclicking sound,indicatingthe ovenis workingproperly.) TimedBakingwill turn the oven on automatically. Mostmeatscontinueto cook afterbeingremoved from the oven.The internaltemperaturewillrise 5 to 10degreesF.
