Minted Mushy Peas
Ingredients
400g frozen peas
30g butter
1 shallot,
Handful chopped fresh mint leaves
Salt and pepper
1. Place the shallot in the Short Cup and, using the Cross Blade, pulse for
10 seconds.
2. Place the chopped shallot in a pan with the butter and fry for 1 minute or until
the shallot is soft. Remove from heat.
3. Place the peas into the Large Cup and, with the Steamer Top on, microwave
according to the pea packaging instructions.
4. Remove the lid and add the shallots to the cooked peas. Using the Cross Blade,
pulse several times until about half of the mixture is puréed.
5. Add chopped fresh mint and season with salt and pepper.
