ONIONBURGERS

large sweet onions, sliced (12 to 16 ounces)
tablespoons margarine or melted butter
teaspoons dry mustard
teaspoanshoney

Preparing Onions
Place ooions is a cooking pan or on a small piece of
aluminumfoil.Combine melted margarine, mustard
and honey, thea drizzle over onions. Cover pan with
lid or fold up edgesof foil and seal with double fold to
completely encloseonions eaving space forsteam to
build. Place panor foil packet on grilldirectly over
medium heat for15 minutes with the grill hood up.

While onionsme cooking, combine ground beef, salt
and pepper inamedium bowl and mix well. Shape
mixture into foot314 inch burger patties and add to
grill, directly over heat. Gdll burgers along with onions
for about 5 minutes, then turn burgers. Gdll for 8 to 10
minutesmoreor until no pink remains in meat, and
onionsare tender. To serve, toast bothsides ofTexas
toast oagdll. "l_en top each slice of Texas toast with a
burger, lettuce,tomato and onion. Sprinkle with
pepperif desired.
DOUBLE SALSA BURGERS
A freshtematesalsa flavors the beef mixture for a
zesty tasting burger. The salsa also serves as a
colorfulloppiag. Makes 6 burger patties.
Ingredients
1 largelomato, seeded and finely chopped
1/2 cup finely chopped green pepper
1/4 cup freely chopped red onion
2 finely€hopped, seeded jalapeno peppers
1 gadicclove, minced
1 tablespoon snippedcilantre
1/4 teaspoon salt
1 1/2 poundslean ground beef
2 cups shredded lettuce
1/3 cup finely shredded cheddar cheese
1/4 cup dairy sour cream and/or guacamole
Preparing the Salsa
Combine tomato, green pepper, onion,jalapeno
peppers, gadic, cilantre and salt in a bowl. Set
aside 2 tablespoons ofsalsa. Cover and chill
remainingsalsauntilservingtime.
Preparing Burgers
In another bowl, combine ground beef with 2
tablespoons ofreserved salsa, mix well. Shape
mixture intosix 1/2 inch thick burgers and place on
thegrilldirectly over medium heat with hood up.
Gdll for 13 to 15 minutes or until no pink remains.
Tum burgers once, halfway through grillingtime.
Arrange the shredded lettuce on individual plates.
Top lettuce with a burger, cheddar cheese and
salsa. Serve with sourcream and/or guacamole.
CHICAGO STYLE HOT DOGS
Serve these hot dogs"Chicago-style" with pickled pep-
pers! Makes 4 servings.

cup ketchup
cup chopped pickled peppers
tablespoons pickle relish
tablespoons choppedonion
teaspoon poppy seed
fullycooked 4-ounce jumbo hot dogs
hot dog buns
Preparing the Relish
Combine ketchup, chopped pickled peppers, relish,
onion and poppyseed in a small bowl, then set aside.
Preparing Hot Dogs
Place hot dogson gdll directly over medium heat 5 to
8 minuteswith the lidup. Turn hot dogs and brushwith
some ofthe relish mixture. Gdll hotdogs 6 to 8 minutes
more or untilthoroughly cooked.
To Serve
Toast inner sides of hot dog buns on gdll. Serve hot
dogsinside bunsand top with remaining relish mixture.
