250 g white unbleached flour type 00
250 g semolina
4 eggs
water
1/2 teaspoon salt
Place the eggs in the stand mixer bowl and add water until you obtain a total
liquid weight of 230 g.
Add flour, semolina and salt.
Attach dough hook, turn mixer to speed 1 and mix for 10 minutes.
Remove dough from bowl and hand knead for 5 minutes.
Separate into pieces of 2cm diameter and 10cm length (cylinder-shape).
