MODEL 4KPES100 ESPRESSO MACHINE FEATURES On/Off Power Switch Press once to turn the espresso machine on, press again to turn off. When on, the dual boilers begin heating and the espresso and hot water buttons will function.
Cup Rail Top of unit accommodates 4 to 6 espresso cups for warming. Stainless steel cup rail helps prevent breakage. Drip Tray Large, removable drip tray catches spills and is dishwasher-safe if placed in the top rack. Tray features a removable stainless steel drip plate. Espresso Boiler Temperature Gauge Dial gauge indicates when espresso boiler has reached optimum brewing temperature. Drip Tray Full Indicator The indicator tip rises above the drip plate when the drip tray is nearly full.
MODEL 4KPES100 ESPRESSO MACHINE FEATURES Portafilter Commercial-size portafilter features chrome-plated brass construction and an easy-to-grip flared handle. Attaches to the brew head with a firm twist to the right. Filter Baskets Stainless steel filter baskets snap into portafilter. Use the small capacity basket for a single shot (1 oz [30 ml]) of espresso, and the large capacity basket for double shots (2 oz [60 ml]). The small basket also accommodates paper coffee pods.
PREPARING THE ESPRESSO MACHINE FOR USE Attach the Cup Rail Align the three rail posts with the holes on top of the espresso machine. Then press the rail posts firmly into the holes. 2. Wash the reservoir in hot, soapy water and rinse with clean water. The reservoir can also be washed in the top rack of the dishwasher. Remove and Wash the Water Reservoir 1. Lift the reservoir slightly, then remove by pulling the bottom of the reservoir from the espresso machine.
PREPARING THE ESPRESSO MACHINE FOR USE WARNING 4. Make certain the Steam Dial is closed by rotating it clockwise as far as possible. Electrical Shock Hazard Plug into a grounded 3 prong outlet. Do not remove ground prong. Do not use an adapter. Do not use an extension cord. Failure to follow these instructions can result in death, fire, or electrical shock. 2. Insert the end of the electrical cord without prongs into the cord receptacle in the back of the espresso machine. 3.
6. Place a coffee cup underneath the brew head. Do not attach the portafilter to the brew head. OPERATION 7. Press the Espresso Button – it is not necessary to wait for the boiler to heat. This activates the water pump and fills the brewing boiler with water. After a few seconds, water will flow from the brew head. When the cup is full, press the Espresso Button again to stop the water pump. The brewing boiler is now ready for use. FEATURES AND 10.
BREWING ESPRESSO For the finest results when brewing espresso, see “Techniques of a Barista” on page 28. 1. Make certain the water reservoir has an adequate supply of water (the water level should be between the “max” and “min” fill lines). 4. Position the portafilter underneath the brew head and align the portafilter handle with the arrow located on the left side of brew group housing. Raise the portafilter into the brew head and tighten it with a firm twist to the right.
9. Sweep any excess grinds from the rim of the portafilter, and insert the portafilter into the brew head. AND 10. Place one or two espresso cups on the drip plate under the spouts of the portafilter. Press the Espresso Button, and espresso will start to flow into cups. When the desired amount of espresso has been brewed (usually 1 oz [30 ml] using the small filter basket and 2 oz [60 ml] using the large filter basket), press the Espresso Button to stop brewing. 8.
BREWING ESPRESSO 12. After removing the portafilter, place a cup under the brew head and press the Espresso Button for a second or two. This cleans the shower screen and flushes any coffee oils and grounds that have migrated into the brew head. Barista Tips When brewing multiple shots: 1. Use a towel to clean and dry the filter basket before filling with coffee. This will help insure even coffee extraction. 2.
FROTHING AND STEAMING MILK OPERATION 4. With the frothing arm pointed into an empty cup, open the Steam Dial for a moment to purge excess water from the line. To open the Steam Dial, turn it slowly counter-clockwise; to close the Steam Dial, rotate it clockwise until it stops. 1. Press the On/Off Power Switch to turn the espresso machine on. 3. Fill the frothing pitcher 1⁄3 full with cold milk. AND 2.
FROTHING AND STEAMING MILK 6. Slowly open the Steam Dial by turning it counter-clockwise. The farther the Steam Dial is rotated, the greater the volume of steam that will be released. Tilt the pitcher to one side to create a whirling motion in the milk, keeping the tip of the frothing nozzle about 1⁄4 inch (6 mm) below the milk’s surface. If large bubbles are being created or if the milk spatters, the nozzle is being held too high. 7. As the froth expands, it will be necessary to lower the pitcher.
To prepare cappuccino, froth and steam the milk before brewing the espresso. This allows the froth to jell slightly and fully separate from the milk. Once the milk is prepared, brew a single shot (1 oz [30 ml]) of espresso into a cappuccino cup, then pour the frothed and steamed milk into the cup with a gentle shaking motion. For a show-stopping flourish, top your cappuccino with nutmeg, cinnamon, chocolate powder, or chocolate shavings.
DISPENSING HOT WATER Hot water can also be dispensed from the frothing arm. This provides a convenient way to make Americanos, tea, or hot chocolate. Filling a demitasse with hot water is also a great way to warm it before brewing espresso. 3. With the frothing arm pointed into an empty cup, open the Steam Dial by turning it slowly counter-clockwise. Then press and hold the Hot Water Button to dispense water.
CARE AND CLEANING Keeping the PRO LINE™ Series Espresso Machine clean is vital to brewing the best espresso possible. Stale coffee oils on the portafilter, filter baskets, and shower screen will ruin the flavor of the most expertly prepared coffee, and any milk left on the frothing arm should be removed. Before Cleaning the Espresso Machine Cleaning the Frothing Arm and Nozzle The frothing arm and nozzle should always be cleaned after milk is frothed. 1.
CARE AND • Wash the portafilter in warm, soapy water and rinse with clean water. Dry with a soft cloth. Do not wash the portafilter in a dishwasher. CLEANING 1. Using a short Phillips screwdriver, remove the screw at the center of the shower screen by turning it counter-clockwise. Once the screw is free, the shower screen should drop from the brew head.
1. Remove the reservoir, empty any stale water, replace, and fill the reservoir with fresh water to the max fill line. 2. Fill the boilers with the fresh water. For instructions, see “Fill and Rinse the Boilers” on page 13. 5. Press the Espresso Button and dispense cleaning agent through brew head for 15 seconds; press the Espresso Button again to shut off. 6.
TROUBLESHOOTING • If the power on indicator remains off and the boilers fail to heat when the On/Off Power Switch is pressed: • If water leaks from the portafilter… – the portafilter may not be properly attached to the brew head Check to see if the espresso machine is plugged into a grounded 3 prong outlet. If it is, unplug the espresso machine, plug it back into the same outlet, and press the On/Off Power Switch.

TECHNIQUES OF A BARISTA What is Espresso? Espresso began as an attempt in the 1800s to quickly brew coffee on demand, by the cup. The goal was to serve the freshest, most flavourful coffee possible and avoid the burned, stale taste of coffee kept warm on a stovetop. To speed the brewing process, coffee pioneers struck upon the idea of forcing water through the grounds under pressure.
Before the espresso machine is even plugged in, you’ll need several elements to produce great coffee. If ground coffee steeps in water too long, all the soluble compounds will be extracted, which makes for a very bitter brew. This is called overextraction. The opposite of overextraction is underextraction, which occurs when coffee is not exposed to the brew water long enough, leaving the essential flavours and aromas locked in the grounds. Underextraction results in coffee that is weak in taste.
TECHNIQUES OF A BARISTA Great Tasting Water An often overlooked element of great espresso is the brew water. If you don’t enjoy the flavour of your tap water, don’t use it to brew espresso – use bottled, purified water instead. Since it doesn’t take long for fresh water to acquire a “flat” quality and taste, it’s also a good idea to change the water in the reservoir often and refill the boilers after a long period of non-use.
The PRO LINE™ Series Espresso Machine is designed to provide an optimum brewing temperature. Dedicated dual boilers eliminate the temperature fluctuations common with single boiler designs when alternating between brewing and frothing. The chrome-plated brass brew group heats quickly, and is commercial-size for a very good reason: commercial-size groups retain heat better than smaller groups. The Espresso Machine does it’s part to provide the right brewing temperature.
TECHNIQUES OF A BARISTA 3. If the coffee in the portafilter has an imprint of the shower screen or the shower screen screw, there is too much coffee in the filter basket! Leveling Leveling the coffee after it has been dosed into the filter is a critical technique for great espresso. If the coffee isn’t evenly distributed in the filter, tamping the coffee will create areas of high and low density.
5. Inspect your tamp. The coffee disc should be smooth and level with no gaps between the side of the filter basket and the coffee. TECHNIQUES OF A 2. With the bottom of the portafilter resting on a solid surface, gently press the tamper into the coffee with the goal of creating a level surface. Remove the tamper from the filter basket with a slight twisting motion – this will help prevent the tamper from pulling up chunks of coffee. 4. Apply a second, finishing tamp (also called a polishing tamp).
TECHNIQUES OF A BARISTA Shot Volume The brew group and boilers are heated. The fresh coffee has been ground, dosed into the portafilter, expertly leveled, and precisely tamped. Now comes the moment of truth: brewing! For the best espresso, never extract more than a single shot (1 oz [30 ml]) using the small filter basket or a double shot (2 oz [60 ml]) using the large one. Brewing more will overextract the coffee and result in thin, bitter espresso.

A GLOSSARY OF ESPRESSO DRINKS Americano 6 to 8 oz (180 to 240 ml) of hot water added to a single shot of espresso. This makes a superb cup of coffee. Café Latte 8 to 10 oz (240 to 300 ml) of steamed milk added to a single shot of espresso. Lattes are often flavoured with 1 to 2 oz (30 to 60 ml) of syrup. Café Mocha A café latte with several ounces of chocolate syrup added, and usually topped with whipped cream and chocolate flakes. It can also be prepared without syrup using steamed chocolate milk.

Réservoir à eau Le réservoir à eau amovible de 2 litres (67 oz) glisse vers la droite ou vers la gauche pour faciliter le remplissage et présente des repères de remplissage « max. » et « min. » bien visibles. Le réservoir transparent permet de voir le niveau d’eau en un coup d’oeil. Le réservoir peut être nettoyé dans le panier supérieur d’un lave-vaisselle. Rebord Le dessus de l’appareil permet de réchauffer quatre à six tasses à expresso. Un rebord en acier inoxydable aide à empêcher le bris des tasses.
CARACTÉRISTIQUES DU MODÈLE DE CAFETIÈRE À EXPRESSO 4KPES100 Porte-filtre Le porte-filtre de format commercial est fait de laiton chromé et présente une poignée évasée facilitant la prise. Il suffit de tourner fermement vers la droite pour le fixer à la tête d’infusion. Paniers-filtres Les paniers-filtres en acier inoxydable s’enclenchent dans le porte-filtre. Utilisez le petit panier pour une dose d’expresso ordinaire de 30 mL (1 oz), et le gros pour une dose double de 60 mL (2 oz).
AVANT D’UTILISER LA CAFETIÈRE À EXPRESSO Alignez les trois tiges sur les trous de la partie supérieure de la cafetière à expresso. Enfoncez ensuite fermement les tiges dans les trous. 2. Lavez le réservoir dans l’eau chaude savonneuse et rincez-le à l’eau propre. Le réservoir peut également être nettoyé dans le panier supérieur du lave-vaisselle. 3. Replacez le réservoir en vous assurant que les tubes d’eau sont à l’intérieur du réservoir.

10. Lorsque le pichet est rempli à moitié environ, relâchez le bouton d’eau chaude et fermez le cadran de réglage de la vapeur en le tournant vers la droite jusqu’à ce qu’il s’arrête. La chaudière à mousse peut maintenant être utilisée. 11. Si vous ne désirez pas d’expresso tout de suite, appuyez sur l’interrupteur d’alimentation On/Off pour éteindre la cafetière à expresso. 8. Placez le pichet à mousser sous le bec du bras à mousser.
INFUSION DE L’EXPRESSO Pour des résultats optimaux lorsque vous infusez de l’expresso, consultez la section « Techniques Barista » à la page 28. 1. Assurez-vous que le réservoir à eau est suffisamment rempli (le niveau d’eau devrait être entre les repères de remplissage « max. » et « min. »). 4. Placez le porte-filtre sous la tête d’infusion et alignez la poignée du porte-filtre sur la flèche située sur le côté gauche de l’ensemble d’infusion.
9. Enlevez tout excès de mouture du bord du porte-filtre et insérez le porte-filtre dans la tête d’infusion. 6. Attendez que la cafetière atteigne la température de fonctionnement ; cela prend environ 6 minutes. Lorsque l’aiguille de l’indicateur de température de la chaudière à expresso est dans la zone « ready » (prêt), la cafetière à expresso est prête pour l’infusion. 10. Placez une ou deux tasses à expresso sur la plaque ramassegouttes, sous les becs du porte-filtre.
INFUSION DE L’EXPRESSO 11. La cafetière à expresso est munie d’une électrovanne à trois voies qui évacue instantanément la pression de l’ensemble d’infusion lorsque la pompe à eau est arrêtée, donc le porte-filtre peut être retiré immédiatement après l’infusion. Enlevez le porte-filtre en tournant la poignée vers la gauche. Lorsque vous enlevez la mouture du panier-filtre, évitez de frapper la poignée du porte-filtre. 12.
CHAUFFAGE DU LAIT À LA VAPEUR ET PRODUCTION DE MOUSSE 3. Remplissez le pichet à mousser de lait froid jusqu’au tiers. 4. En pointant le bras à mousser vers une tasse vide, ouvrez le cadran de réglage de la vapeur pendant un instant pour éliminer l’excédent d’eau. Pour ouvrir le cadran de réglage de la vapeur, tournez lentement vers la gauche ; pour le fermer, tournez vers la droite jusqu’à ce qu’il s’arrête.
CHAUFFAGE DU LAIT À LA VAPEUR ET PRODUCTION DE MOUSSE 5. Alors que le cadran de réglage de la vapeur est fermé, réglez le bras à mousser de façon à assurer une position de travail confortable, puis immergez la pointe du bec à mousser juste sous la surface du lait dans le pichet à mousser. 8. Lorsque la mousse de lait atteint environ les trois quarts du volume du pichet, baissez le bec à mousser dans le pichet pour finir de chauffer le lait à la vapeur.
Pour préparer un cappuccino, chauffez le lait à la vapeur et faites la mousse avant d’infuser l’expresso. Cela permettra à la mousse de se gélifier légèrement et de se séparer complètement du lait. Une fois le lait prêt, infusez une dose ordinaire d’expresso (30 mL / 1 oz) dans une tasse à cappuccino, puis versez le lait chaud et la mousse de lait dans la tasse en secouant légèrement.
DISTRIBUTION D’EAU CHAUDE Il est possible de distribuer de l’eau chaude à l’aide du bras à mousser pour préparer facilement du café américain, du thé ou du chocolat chaud. Le remplissage d’une demi-tasse d’eau chaude est également une excellente façon de réchauffer la tasse avant d’infuser l’expresso. 3. En pointant le bras à mousser vers une tasse vide, ouvrez le cadran de réglage de la vapeur en tournant lentement vers la gauche.
ENTRETIEN ET NETTOYAGE 1. Éteignez la cafetière à expresso. 2. Débranchez la cafetière à expresso de la prise murale ou coupez le courant. 3. Laissez refroidir la cafetière à expresso et toute pièce ou tout accessoire qui y est fixé. Nettoyage du bras à mousser et du bec Le bras à mousser et le bec devraient toujours être nettoyés après la production de mousse de lait. 1. Retirez le manchon du bras à mousser du bec en tirant vers le bas. Le manchon peut être lavé dans l’eau chaude savonneuse.
ENTRETIEN ET • Lavez le porte-filtre dans l’eau chaude savonneuse et rincez à l’eau propre. Séchez à l’aide d’un chiffon doux. Ne lavez pas le porte-filtre au lave-vaisselle. NETTOYAGE 1. À l’aide d’un tournevis à pointe cruciforme court, retirez la vis située au centre du tamis en tournant vers la gauche. Une fois la vis enlevée, le tamis devrait se détacher.
1. Retirez le réservoir, videz toute eau restante, replacez le réservoir et remplissez-le d’eau fraîche jusqu’au repère de remplissage maximal. 2. Remplissez les chaudières avec de l’eau fraîche. Consultez les directives de la section « Remplissage et rinçage des chaudières » à la page 13. Détartrage Avec le temps, les dépôts calcaires (le « tartre ») provenant de l’eau s’accumulent dans la cafetière à expresso, ce qui a pour effet d’altérer la qualité de l’expresso.
DÉPANNAGE • Si l’indicateur d’alimentation ne s’allume pas et les chaudières ne chauffent pas lorsque vous appuyez sur l’interrupteur d’alimentation On/Off : Vérifiez si la cafetière à expresso est branchée sur une prise à la terre à trois broches. Si elle est branchée, débranchez-la, puis rebranchez-la sur la même prise et appuyez sur l’interrupteur d’alimentation On/Off.

TECHNIQUES BARISTA Qu’est-ce que l’expresso ? L’expresso est né d’une tentative, dans les années 1800, d’infuser rapidement une tasse de café sur demande. Le but était de servir le café le plus frais et le plus savoureux possible et d’éviter le goût de brûlé éventé du café qu’on garde chaud sur une cuisinière. Pour accélérer le processus d’infusion, les pionniers du café ont eu l’idée d’utiliser la pression pour forcer l’eau à passer à travers la mouture.
Avant l’infusion : éléments d’un excellent expresso Pour infuser un excellent expresso, il faut comprendre ce qui se retrouve réellement dans la tasse une fois que le café est exposé à l’eau. Un grain de café torréfié contient environ 30 % de composés hydrosolubles. De ces composés, 20 % se dissolvent assez facilement, alors que les 10 % restants prennent plus de temps — ce qui est positif puisque ces composés moins solubles sont acides et ont habituellement un goût désagréable.
TECHNIQUES BARISTA Eau de qualité L’eau d’infusion est un élément déterminant de la qualité de l’expresso qu’on oublie souvent. Si vous n’aimez pas le goût de l’eau du robinet, ne l’utilisez pas pour infuser l’expresso — utilisez plutôt de l’eau purifiée en bouteille. Comme l’eau fraîche perd rapidement son bon goût, il est également souhaitable de remplacer souvent l’eau du réservoir et de remplir de nouveau les chaudières lorsque la cafetière n’a pas été utilisée pendant une longue période.
• Ne rincez jamais le porte-filtre à l’eau froide si vous infusez encore du café. Après avoir enlevé la vieille mouture du filtre en le secouant, essuyez toute mouture restant dans le panier à l’aide d’une serviette propre. Assurez-vous que le panier-filtre est sec avant d’ajouter du café. • Laissez le porte-filtre vide fixé à la tête d’infusion pendant que vous vous acquittez d’autres tâches, par exemple la mouture ou la production de mousse.
TECHNIQUES BARISTA Voici comment déterminer si le panier-filtre est trop rempli : 1. Remplissez le panier, égalisez le café et tassez bien (voir la section « Tassage » suivante). 2. Fixez le porte-filtre à la tête d’infusion, puis retirez-le immédiatement. 3.

Tassez une dernière fois le café (tassage de polissage) en pressant droit vers le bas avec une pression d’environ 15 kilogrammes (35 livres), puis relâchez légèrement (à environ 9 kilogrammes / 20 livres) et polissez le café en passant le pilon autour (deux tours complets). 2. Le dessous du porte-filtre reposant sur une surface solide, pressez délicatement le café à l’aide du pilon de façon à égaliser la surface.
TECHNIQUES BARISTA Volume de la dose L’ensemble d’infusion et les chaudières sont chauds. Le café frais est moulu, dosé dans le porte-filtre, égalisé de façon experte et tassé avec précision. L’heure de vérité est maintenant arrivée : l’infusion ! Pour obtenir le meilleur expresso qui soit, n’extrayez jamais plus d’une dose ordinaire (30 mL / 1 oz) à l’aide du petit panier-filtre ou une dose double (60 mL / 2 oz) à l’aide du gros.
Dépannage pendant l’infusion Lorsque l’expresso s’écoule... …s’il est clair et coule rapidement : • Examinez votre technique de tassage — le café n’est peut-être pas assez tassé pour assurer une résistance uniforme à l’eau d’infusion. ... s’il est de couleur cannelle plutôt que brun foncé : • Utilisez une mouture plus fine. • Utilisez un mélange de café moins acide.
GLOSSAIRE DES BOISSONS À BASE D’EXPRESSO Café américain Ajout de 180 à 240 mL (6-8 oz) d’eau chaude à une dose ordinaire d’expresso. Cela donne une tasse de café exquis. Café au lait Ajout de 240 à 300 mL (8-10 oz) de lait chauffé à la vapeur à une dose ordinaire d’expresso. Le café au lait est souvent aromatisé de sirop [30-60 mL (1-2 oz)]. Café moka Ajout de plusieurs onces de sirop de chocolat à un café au lait ; habituellement garni de crème fouettée et de copeaux de chocolat.
