CHICKENWINGS
1lbchickenwings1/4
cupofsakeordrysherry
1/2 cupsoysauce1clovecrushedgarlic
1tablespoonfinelychoppedfreshginger
Trimexcessfat,removetipsfromchickenwingsandpatdry.Placewingsinabowl.
Combine soy sauce, garlic, ginger, sake or dry sherr y. Pour mixture over chicken
wings. Toss
well. Cover and allow to marinate for 3 hours, turn wings now and
again. Place chicken wings on low pan and cook at 230°C for 10 min. Check
process. Turn or move wings as necessary. Cook for a further 8 to 10 min until
goldenbrown.

60g/2¼ozgroundalmonds
125g/4½ozgoldencastersugar
125g/4½ozsoftbutter
100g/3½ozicingsugar
Method
A wellknown traditional cake to which I've added ground almonds.
Bite into a
sliceandtastetheintensecitrusflavoursofthesweetglazewhichispouredover
the hot cake. You will need a greased and baselined 18cm/7 inch deep cake tin
(squareorround)whichfitsinyouroven.
