2 cups our
1 1/2 teaspoons baking powder
1 1/2 cups whole ricotta cheese
2 tablespoons sugar
1 cup milk
3 large eggs, separated
1/4 cup sour cream
2 teaspoons grated lemon zest
1 cup pecans, chopped
1 teaspoon salt
Preheat griddle to 350°F.
Combine, in the following order, ricotta cheese, milk, egg yolks, sour
cream, our, baking powder, sugar, lemon zest and salt in Blender Jar.
Press the CAKE button. Bar Blender will stop when program has
nished. Pour into large bowl. Using a second large bowl, beat egg
whites until stiff peaks form. Gently fold into ricotta mixture. Fold in
chopped pecans. Ladle about 1/3 cup batter for each pancake onto
preheated griddle. Cook the pancakes for 2 to 3 minutes. Top should be
covered with bubbles and the edges should look dry. Turn and cook the
other side. Repeat with remaining batter. Serve immediately with
butter and your favorite syrup. Makes about 15 pancakes.
