tips
Using the roasting rack proxdded, heated air will
be circulated ovm; tinder and around the fbod
being roasted. The heated air seals in jttices
quickly for a moist and tender interior while, at
the same time, creating a rich golden bro,ma
exterior.
When you are convection roasting, it is important
that you use the broiler pan and grid and the
special roasting rack. The pan is used to catch
grease spills and the grid is used m prevent
grease spattel.'s, while the roasting rack allo,a_ the
heated air to circulate tinder the meat and
increase browning on the tmderside of the meat
or poult_y.
Place the grid on the broiler pan and put the
roasting rack over them, making sure the posts
on the roasting rack fit into the holes in the
broiler pan.
Place meat on the roasting rack.
When convection roasting large cuts of meat,
