• To avoid losing the vibrant colors of
vegetables, those that grow above
ground should not be covered
during the cooking process.
• Store purchased vegetables in
the same manner in which you
bought them from the grocery. For
example, potatoes should never be
stored in the refrigerator.
• Do not cook with or eat potatoes
that have roots growing from
them. This usually means they
are past their prime and could be
detrimental to your health.
• Save vegetable scraps such as
carrot peels, celery stalks and
onions as ingredients for soup and
stew stock. Freeze until needed.
Vegetables
• Steaming vegetables is a great
way to retain their nutrients. It
helps preserves color and ensures
the intake of maximum vitamins.
To steam, place water in a pot and
bring it to boil. Insert steam basket
in pot, situated above water line.
Place vegetables in basket and
cook until they reach al dente (rm
to the bite) consistency.
