2” cubes

1cuppackedatleafparsley,
roughly chopped
2 teaspoons dried oregano
3 garlic cloves
2tablespoonsredwinevinegar
1 teaspoon kosher salt
¼ teaspoon ground black pepper
¼teaspoonredpepperakes
½ cup olive oil

DIRECTIONS
1. Preheat fryer to 375°F.
2. Placepotatoesinasaucepanofcoldwaterandbringtoaboil.
Lowertosimmerandcookfor5to8minutes.Drainandlet
cool on a cookie sheet or plate.
3. Inabowl,combineour,paprikaandsalt.
4. Patpotatoesdrywithapapertowelanddredgeintheouruntil
evenlycovered.Shakeoffanyexcessour.
5. Place potatoes in a single layer in the frying basket, and fry,
covered,for3to4minutesuntilgoldenbrown.Drainonpaper
towels.Repeatwithanyremainingpotatoes.
6. Blendparsley,oreganoandgarlicinafoodprocessor.Addvinegar,
saltandpeppers.Slowlystreaminoliveoil.
7. Drizzlechimichurrisauceoverpotatoesbeforeserving.

DIRECTIONS
1. Placetartarsauceingredientsinabowlorafoodprocessorand
mixuntilingredientsarewellcombined.Setasideinasmallbowl.
2. Preheat fryer to 375°F and place fryer basket in oil.
3. Sift1½cupourand¼teaspoonsaltintoabowl,thenwhiskin
beer gently until just combined. Stir in remaining ¼ teaspoon salt.
4. Patshdry.Sprinkleshonbothsideswithsaltandpepper,then
dustlightlyinremaining1/2cupour.Dipshintothebeerbatter,
allowingexcesstodripoff.
5. Slowlylowerhalfoftheshintotheoil,andreleaseafterafew
secondsorwhenacrusthasformed.Fryshuntildeepgolden,
about4to5minutes.Setonaplatelinedwithpapertowel.Repeat
withremainingsh.Servewithtartarsauce.
