Makes enough crust
for 1 (9-inch) pie
1 ¾ cups all-purpose flour
½ cup vegetable oil
dash of salt
3 tbsp. cold water
1. Place the flour into a wide bowl. Make a well in the center of the flour that only
goes down about halfway. Pour the oil into the well. Sprinkle a dash of salt on top
of the oil.
2. Using a pastry cutter, begin mixing the flour into the oil working from the outsides
in and turning the bowl as you go. Continue mixing this way, scraping the flour
away from the edges of the bowl as you go. This will form little clumps of pastry
with NO wet spots.
3. Sprinkle 3 tbsp. of COLD water evenly over pastry. Using the pastry cutter, work
until the water is completely mixed in.
4. Finally, gather all the mixed pastry up and gently form into a ball. Do not press or
roll the crust. Let it breathe and be soft.

of the dough and lay onto lightly floured wax paper. Place 2
sheets slightly overlapping to allow for plenty of rolling surface. Flatten the dough
to about ½ inch thick with palm of your hand.
6. Sprinkle flour on top of flattened dough and cover with another two sheets of
wax paper.
7. Using a rolling pin, roll dough to the thickness you desire for piecrust (I prefer
slightly less than ¼ inch thick). Roll in several directions to create a round
pastry shell.
8. Remove top wax paper and place pastry upside down in pie pan. Allow crust to
settle a bit and then gently remove remaining wax paper.
9. Lightly mold dough to the pie dish and fill with pumpkin filling (See recipe
on page 106).
