Jalapeño Citrus Chicken:
Makes 4 servings
Tip: Serve with steamed rice and pieces
of pita bread and a salad topped with a
lemon-lime vinaigrette.
1 lb. boneless chicken breast
1 large brown onion, peeled and sliced
into rings
salt and pepper to taste
1 large orange, peeled with pith removed
1 large lemon, peeled with pith removed
1 large lime, peeled with pith removed
2 large jalapeño peppers
4 cloves garlic, peeled
½ cup fresh cilantro
1 tsp. cumin
1. Preheat oven to 450º and spray a large
baking dish with non-stick cooking spray.
2. Wrap chicken in plastic wrap or wax
paper and pound until flattened. Carefully
place chicken with tongs (safety while
cooking!) in dish. Salt and pepper lightly
(there will be spices in the sauce!) and
set aside.
3. Place orange, lemon, lime, jalapeños,
garlic, cilantro and cumin into the
Torpedo™ and lock lid into place.
Press ON for 1-min. or until combined.
4. Pour sauce over chicken, toss with the
onion rings, and place in refrigerator to
marinate for at least 2 hrs. (or more,
if possible). Trust me on the time, it will
make a difference!
5. Bake for 45 min. - 1 hour or until chicken
is cooked all the way through and the
juices run clear.
Variations: “The sauce will have a green color to it and depending on sweetness of
the fruit, the taste will vary slightly. Adjust the salt & pepper or jalapeño to your lik-
ing. Also depending on amount of juice in fruit, the consistency will vary slightly.
You may add water, vinegar, or additional juice if you would like more sauce.
Some juice suggestions to add to the mix are: pineapple, mango, or tangerine-the
possibilities are endless. You can substitute mango, papaya, or pineapple for some
or all of the fruit. Change to serrano peppers for a hotter flavor or any red pepper
for a change of color! Or, add tomatoes and onions to the sauce for a red coloring
and bold flavor. Your friends will come back for more. Try it!” - Daniel
