4 slices lean bacon
(about 4 oz.)
1 tbsp. butter
2 tbsp. finely diced red pepper
1 tbsp. finely diced

3 oz. cheddar cheese, cut
into 1-inch blocks
6 oz. Velveeta ™ cheese
(or other American
cheese), cut into
1-inch blocks
½ tsp. brown mustard

8 tsp. celery salt

8 tsp. ground black pepper
2 tsp. chicken granules
or boullion
2 green onions, trimmed,
retaining green tops
1 tbsp. of grease from
cooked bacon (optional)

Cheese Soup
1. Cook bacon on a cookie sheet in the oven at
375° for about 12 to 15 min. or until brown
and crispy. (This will keep your bacon in nice
long strips instead of crinkling up- making
it easier to crumble into pieces). Drain grease
and set it aside. Trim any large sections of
fat remaining off the bacon and place strips
on a paper towel to blot.
2. Melt butter over medium heat and sauté
green and red pepper for 5 min. Allow them
to still retain a small bit of crispness and
crunch. Set aside.
3. Place all ingredients from the water to the
bacon grease into the Torpedo™ and lock lid
into place. Press the AUTO button and allow
cycle to complete until the Torpedo™
turns off.
4. Add sautéed peppers and PULSE lightly 2
times to combine. This must happen quickly
“on and off” so that you don’t lose your pieces
into the soup.
5. Pour mixture into a large 2 quart kettle and
add the trimmed, crumbled bacon.
6. Cook over medium heat about 10 min. until
mixture begins to thicken, stirring constantly
so soup does not stick to the bottom of pan.
This will thicken quickly.
7. Remove from heat and allow soup to cool for
about 5-10 min., stirring occasionally. Serve
warm with a dollop of the vegetable topping
in the middle. (See recipe below)

1 large Roma tomato, finely diced
1 tbsp. of minced fresh green pepper
1 tbsp. of minced fresh yellow pepper
1 tbsp. of minced fresh red pepper
1 tbsp. of minced red onion
Toss items together in a small bowl
and reserve for garnish.
