Clean
dead
weight
assembly
• Turn twist latches. Lift dead weight cover off of fryer.
• Clean inside cover with damp towel.
• Lift out deadweight. (ball-end deadweights must be handled
carefully to prevent damage to round end. Dents or scratches
will cause steam leakage that could affect product quality.)
• Clean valve seat with the end of a dry towel.
• Clean deadweight with cold, damp towel. Reinstall
deadweight. Lower carefully to avoid damage.
• Be sure gasket is in place. Replace dead weight cover and
latch securely.

Refill
frypot
• Check that drain valve is closed.
• Pump filtered shortening into fryer. Lower lid to the horizontal
position, then slide lid over frypot.

Wipe
surfaces
• Wipe outside of fryer with:
– a dry towel to remove excess shortening, then
– a cold, damp, sanitized towel, then
– a dry towel.
