The accessories Your oven is provided standard with: • 2 trays (1 baking tray and 1 dripping pan) suitable for all types of cooking. • 1 sliding grid recommended when cooking on 3 racks and when cooking meat together with a dripping pan. • 1 rotisserie assembly (please see rotisserie cooking on p. 16 and 17). The sliding grid Always use the sliding grid with the tabs folded down and together with the dripping pan.

Setting the time After the appliance has been connected to the power supply, symbol and the time flash. 08:30 T 1 Turn knob 2 Press F P P to set the correct hour. P to confirm. 12:30 T P 1 F 2 ! The minutes flash: 1 Turn knob 2 Press P to set the correct minutes. P to confirm. 12:00 T P 1 F 2 Note 6 You may only set the correct time if you haven't programmed a cooking time.
Mode selector Set knob F to the desired mode. 11:30 T P F According the cooking mode selected, a pre-set temperature is temporarily displayed (see the following paragraph for how to modify the temperature). 160C T ! You can use knob P F F to turn the oven off. To do so, turn the knob back to the 0 setting. 12:30 T P F First use: • The first time you use your oven, turn it on with nothing in it in a well-aired room. Use the "fan assisted" cooking mode oven on for 1 hour.
Setting the temperature If you want to, you can modify the pre-set temperature suggested by your oven for each cooking mode (except for dough proving). 1 Turn knob T to display the temperature, 2 Press T to change it, 3 Turn T to display the desired temperature, 4 Press T to confirm your choice. 2 1 170C T 4 F P 3 Setting the cooking time Knob P allows you to set: ✮ a cooking time or pyrolytic self-cleaning (page 21), ✮ the end cooking or pyrolytic self-cleaning cycle time (page 22).
COMMENTS FROM THE CULINARY EXPERT The cooking modes were devised with the help of the Scholtès culinary expert. Our expert is a professional chef and an integral member of the Scholtès Research and Development team. The recommended cooking modes, temperatures and oven rack heights reflect our expert's own experience in the kitchen and will allow you to achieve the very best results. Recommandations : • When the appliance is in use, it becomes quite hot.
The cooking modes Scholtès ovens use different techniques to produce, circulate and preserve heat. Your oven has 9 cooking modes to suit different types of dishes. The simple symbols make it very easy to select the most suitable cooking mode.
Defrosting Care must be taken when defrosting food so that the outer parts, which are the first to defrost, do not develop harmful bacteria. Food is generally defrosted in the refrigerator: this entails a slow defrosting process. You can halve defrosting times by using this oven setting. It is ideal for defrosting: - food to be eaten raw (such as strawberries, for example), - food to be cooked: chicken will defrost in half the time. Defrosted food should be eaten soon after defrosting.
Dough proving This mode is very useful for proving dough (made with yeast) before baking. It provides a constant temperature of 40°C (which cannot be modified) to help bread, buns, brioches and pizza dough rise... This particular mode provides the ideal setting for the leavening process of dough. Place the dough on the baking tray on rack 2. Set F to position . The pre-set temperature of 40° is displayed briefly. 11:30 T P F When proving is complete, turn F back to "0" to turn the oven off.
Pizza/Bread baking This mode is particularly suitable for bread and buns (containing yeast or baking powder). In fact, it helps prevent the dough from drying and favours rising before the surface becomes golden and crusty: just like in a bakery. We recommend you pre-heat the oven. Bake on the baking tray on rack 2. Set F to position . The pre-set temperature is displayed for a few seconds: in this case 160°C.
Pastry mode This mode is especially recommended for baking tarts, quiches and the like. Pastry bases are baked to perfection while the filling remains soft and tender. Use the baking tray on rack 2. We recommend you pre-heat the oven before placing your dish in it. Set F to position 220°C. . The pre-set temperature is displayed for a few seconds: in this case 11:30 T F P Wait until the oven has pre-heated (a series of beeps will sound) before placing your dish Note inside it.
Roasting This cooking mode is particularly suitable for red or white meats, au gratin dishes, etc. We recommend you use the pre-set temperature for roasts. Use the dripping pan on rack 1 and place your meat directly onto a grid on rack 2. It is best to start with a cold oven. Set F to position . The pre-set temperature is displayed for a few seconds: in this case 210°C. 11:30 T P F When roasting is complete, turn F back to "0" to turn the oven off.
Rotisserie The rotisserie supplied with your oven consists of: • a support situated on the 3rd oven rack from the oven bottom so the rotisserie fits into the hollow shaft of the rotisserie motor located at the back of the oven, behind the perforated oven back panel; • a spit that passes through the roast, which is kept firmly in place on both ends by two adjustable sliding forks each fastened onto the spit by means of a wing nut.
Rotisserie This cooking mode is especially suited to roasting on the spit with the oven door shut. The meat rotates slowly, browning evenly until it is cooked all the way through. Use the dripping pan on rack 1 to catch any cooking juices or fat, and place the rotisserie support on rack 3. It is best to start with a cold oven. Set F to position . The pre-set temperature is displayed for a few seconds: in this case 270°C.
Barbecue Keep young children away from the oven when using the Barbecue mode as some accessible parts become very hot. This cooking mode is ideal for cooking beef ribs, for grilling meat and au gratin dishes and the like, with the oven door ajar (using the notch provided on the door hinge). It is best to start with a cold oven. Use the dripping pan on rack 1 to catch any cooking juices or fat. Place the meat on the grid, the rack height depends on the size of the meat itself. Set F to position .
Convection This cooking mode is ideal for slow-cooking (casseroles, etc.) or for Bain Marie cooking. Use the baking tray on rack 2. We recommend you pre-heat the oven before placing your dish in it. Set F to position . The pre-set temperature is displayed for a few seconds: in this case 190°C. 11:30 T F P Wait until the oven has pre-heated (a series of beeps will sound) before placing your dish Note inside it.
Fan assisted cooking This mode is particularly suitable for cooking identical or different dishes on more than one rack. Even if the dishes vary in nature, their respective flavours are not mingled during cooking. To use this mode, all dishes must require the same cooking temperature. We recommend you pre-heat the oven before placing your dish in it. Cooking on 2 racks Racks 1 and 3 Cooking on 3 racks Racks 1, 3 and 5 Set F to position .
Programming the oven for immediate start The oven starts heating immediately and comes to an automatic stop when the end cooking time is reached. Select a cooking mode (see page 7). 1 Turn P towards the right to light symbol 2 Press P to set the time. . 0.0 0 T 1 2 2 1 P F Turn P to display the desired cooking time (max. 9h59 min). Press P to confirm, the countdown begins immediately. 1.3 0 T ! 2 1 P F A series of beeps and a flashing "0:00" signal the end of cooking.
Programming the oven for a delayed start The programmer automatically determines the cooking start time according to the displays and the oven automatically turns off at the desired time. For example: it is 10:00 a.m. Programme a cooking time of 1 hour and 30 minutes (see steps 1 & 2 on page 21). 1.3 0 T F P The display indicates the cooking time set added to the correct time, i.e.: 10:00 + 1H30 = 11:30 a.m. (if you were to programme cooking for an immediate start, it would end at 11:30 a.m.).
Pyrolytic self-cleaning Keep young children away from the appliance during the pyrolytic self-cleaning process, as the outside of the cooker may become hot. This process is the most effective appliance self-cleaning cycle in Europe, and was introduced by Scholtès more than thirty years ago. It does away entirely with the need to clean the oven manually. In fact, the oven cleans itself completely, without the need for intervention or surveillance, and without the use of any detergents whatsoever.
Pyrolytic self-cleaning Note When the temperature inside the oven is high, the oven door is locked and the display indicates a flashing PYRO. A beep + a flashing P0:00 / PYR signal the end of the cycle. Press P to stop the beeping. P0:00 T ! P F Turn F back to "0" to turn the oven off. 14:00 T P F Note The door unlocks automatically when the temperature inside the oven drops sufficiently.
Advice and recommendations If your oven releases a lot of smoke • Make sure you have selected the correct cooking mode for the type of dish you want to prepare and that you have selected the right accessories and put the dish in the oven at the recommended rack height. • Also check the temperature displayed: it may be too high for the dish you are cooking. • Check the degree of soil of the oven, and whether the latter needs to be cleaned.
