Temperature Settings
1. Foods of different densities may require a higher or
lower amount of heat to keep the food at the desired
temperature. For example, ground beef will need a
higher temperature setting to keep warm than will a
marina sauce.
2. To eliminate the risk of spoiling or food borne
illnesses, all hot and/or warm foods should be
maintained at 140°F or above.
3. To maintain the minimal temperature of 140°F, use a
food thermometer and adjust the settings on the
temperature control dial as needed.
4. Check the temperature of the food with a food
thermometer periodically, especially if the food will be
remaining in the buffet server for an extended period
of time.
5. This 2-tray buffet server is designed to reach a
minimum temperature for each setting on the
temperature control dial. (See below for more
information)
Low
Medium -
185°F
This is the minimum temperature when the 2 server trays are
used on the warming tray.
High - 200°F
This is the maximum temperature when the 2 server trays are
used on the warming tray.
